Como ya he mencionado, la fideu\u00e0 se parece bastante a la paella de marisco, pero en lugar de arroz, se hace con fideos y finos. Tradicionalmente, se cocina en una sart\u00e9n ancha y poco profunda conocida como <b>paellera<\/b>. [Algunos lo discuten, llamando <i>paella<\/i> a la propia sart\u00e9n. En catal\u00e1n, sin embargo, \u00abpaella\u00bb se refiere a cualquier sart\u00e9n, por lo que la que se utiliza para este tipo de plato se denomina coloquialmente <i>paellera<\/i>].<\/p>\n<p>Los fideos se sofr\u00eden hasta que se vuelven dorados y crujientes, lo que da al plato un sabor sutilmente tostado. Luego, se cuecen a fuego lento en un rico caldo de pescado junto con mariscos como gambas y sepia, mezclados con <b>una <\/b>una deliciosa base de cebollas, ajos, tomates y pimientos salteados\u2014el sofrito. En mi versi\u00f3n, utilizo <b>cebolla<\/b>, <b>tomate<\/b> y <a href=\"https:\/\/www.foodswinesfromspain.com\/en\/food\/products\/vinegar---spices\/nora\"><b>\u00f1ora<\/b><\/a> un pimiento ahumado catal\u00e1n que puede ser dif\u00edcil de encontrar en otros sitios. Si hace falta, puedes sustituirlo por piment\u00f3n ahumado o un pimiento mexicano suave que no pique.<\/p>\n<p>Tambi\u00e9n vale la pena se\u00f1alar que en Catalu\u00f1a y Gand\u00eda, el plato casi siempre utiliza fideos cortos y finos. En algunos lugares, puedes encontrar versiones hechas con fideos huecos en forma de codo, pero eso no se considera aut\u00e9ntico. Cuenta la leyenda que los pescadores de una barca se quedaban a menudo sin arroz cuando hac\u00edan <a href=\"https:\/\/ca.wikipedia.org\/wiki\/Arr%C3%B2s_a_banda\"><b>arr\u00f2s a banda<\/b><\/a>, un plato tradicional de marisco y arroz, porque su capit\u00e1n ten\u00eda mucho apetito. Para solucionarlo, el cocinero de a bordo cambi\u00f3 el arroz por fideos, con la esperanza de que al capit\u00e1n no le gustara tanto y dejara m\u00e1s para la tripulaci\u00f3n.<\/p>\n<p>Pero el resultado del plan fue lo contrario. El plato fue un \u00e9xito, extendi\u00e9ndose r\u00e1pidamente a los restaurantes locales y al resto de Espa\u00f1a. No suelo a\u00f1adir pimientos al <b>sofrito porque <\/b>creo que su sabor no complementa bien el resto del plato. Tambi\u00e9n me gusta a\u00f1adir un toque personal: una pizca de <b>almendras tostadas<\/b> molidas por encima, que parece gustar mucho a todo el mundo.<\/p>\n<p>Para el caldo, utilizo lo que en catal\u00e1n llamamos <strong>fumet<\/strong>, un rico caldo de pescado. Tambi\u00e9n puedes utilizar caldo de pescado comprado o incluso caldo de verduras si quieres ahorrar tiempo. Y por \u00faltimo, siempre lo sirvo con una guarnici\u00f3n de <strong>allioli casero<\/strong>.
